Good afternoon ladies. I am one happy blogger indeed, as I have some exciting news to share with you today over here on Healthy Chicks!

A few weeks ago, I was given the opportunity to interview Rod Smith, founder and CEO of the Green PolkaDot Box (GPDB) for an article featured in the Huffington Post “Good News” section. Yes, my writing has been published in the Huffington Post, which as a journalism graduate and freelance writer is a huge (HUGE!) accomplishment for me and something I’ve worked incredibly hard at.

Busy Gal’s Five-Minute Dinner: A Healthy “Fast Food” Trio

Today is one of those days where I found myself pressed for time in the kitchen, let alone to breathe in general. With work at 6 a.m., then straight to a meeting with a client for a health coaching session, and hours of freelance writing in Starbucks, I knew I wouldn’t be home for dinner until at least 8:15 p.m.

However, I didn’t want to let my action-packed day get in the way of my dietary choices, as I know very well that the more wholesome and balanced the meal, the better I feel overall (mind, body, & soul).

As you know, I’m usually a huge fan of 100% home-cooked, all-natural meals for ideal nutritional benefits, but today I had to be a little flexible due to the time crunch. Instead of settling for ordering in (or dining out), to-go sushi, or bland pasta, I chose to make the most of what I had on hand with a little help from Trader Joes.

Jamie Oliver’s Food Revolution: Blog of the Month

This morning I was beyond delighted to wake up to an email from Jamie Oliver’s Food Revolution team, informing me that Healthy Chicks has been chosen as one of their blogs of the month. Not only do I get to be featured on their website for the month of December, but I get to “wear” this Food Revolution badge on my blog loud and proud.

I’d be lying to say I’m not absolutely ecstatic to be chosen as a featured blogger, as it is a huge honor. But it means more to me than a “title.” I’m a huge supporter of the Food Revolution and all Jamie has done to get the world eating healthier, and start promoting a more respectable food industry. His mission in teaching people how to spend more time in the kitchen (and less time at the drive-through), cleaning up school lunches, and helping people fuel the bodies and soul with proper nutrients is absolutely phenomenal.

Comfort Food for You AND Your Kids: Mac & Cheese and Chicken Nuggets Get a Makeover

Craving these lil guys? Try this healthy substitute instead. You AND your kids will appreciate.

I have a confession: As healthy as I may be, there’s something about those little Dinosaur chicken nuggets and boxed Mac ‘n’ Cheese that gets me every time. Every time I see my little cousins nibble away on their itty bitty dinos, I want to join in. I don’t know if it’s childhood memories or comfort food cravings that gets to me, but it is what it is.

But I’m well aware these little dino friends aren’t the best for your health. In fact, the Tyson’s brand for one is loaded with foreign, unnatural ingredients like rib meat, modified corn starch, sulfate, riboflavin, dried whey, caramel color, and methylcellulose. Yuck. What happened when chicken was just…chicken?

Anyway, when my craving hit last night, I decided to give this classic comfort food combo a makeover, and let me tell you it was definitely for the better. My remake came out tastier, crunchier and best yet: guilt-free. Feed this to your kids next time they want McDonald’s, or stuff your face with it. No judgement. None at all.

Oof, I’m All Backwards: How to Plan Wholesome, Healthy Meals So You Can Feel Great All Week Long

Oof, I feel all backwards today! Upside down, out of whack, all discombobulated. You know…something just feels a bit off. Luckily, I know exactly what that something is this time. You see, I’ve been away since Friday morning on a New Hampshire getaway with my family and The Boy. We had a wonderful time relaxing in the steam room, sauna and pool, drinking my cousin’s killer margaritas along with some specialty hard ciders that the boy got me into (they’re gluten free!), hiking in the snow, and eating our little hearts out.

Why am I feeling all backwards then, you ask? Well, it was most definitely the eating part. I ate completely backwards – or would you say upside down? – than I normally do. Back in my tiny Boston apartment, where I cook most of my meals for myself, I have a pretty structured diet: a humungous, nutritious breakfast,  a good-sized lunch and a smaller dinner followed by a little “treat” and a cup of tea. I rarely eat any other way, as this daily menu makes me feel my ultimate best – inside and out!

When a Healthy Chick Loses Control of Her Diet

Have one too many of these today? You’re not screwed just yet…

Yesterday was one of those days where my diet was absolutely out of whack. I ate like I was hungover: careless, confused and thoughtless. It seemed I had absolutely no sense or control over what I was eating; I simply moseyed my way through the day munching and daydreaming away. You see, I slept over the Boy’s house the night before and we sorta overstayed our morning in bed. (Hey, it was cold out!) So by the time I left to rush for a meeting, I didn’t even think to eat breakfast. [mistake #1: skipping breakfast, only the most important meal of the day] I mean, what do boy’s have anyway? Probably just OJ and sugary cereal. No thanks.

As my tummy grumbled and my hunger pangs got the best of me, I couldn’t help but resist diving into frothy coffees and some kind of carrot-cake tasting dessert balls that were served on a platter once I got to the meeting.
