The Recipe to a Happy, Simple Saturday

First off, I’d like to take a moment to honor this day, and remember all of the loved ones who were lost. We should all keep that in mind throughout the day, and try to maintain a positive, hopeful mindset for the future. 

I plan to spend this gorgeous Boston fall Saturday as simply as possible. No crazy plans or hectic appointments. Instead I’m going to relax, reflect and be happy. It’s said a picture’s worth a thousand words so instead of my usual wordy posts, I decided to enlighten you with photographs instead. This is how I plan to spend my lazy yet thought-provoking Saturday…

Seek out life’s simple pleasures. Find joy in the little things. This can be going for a walk and feeling the crisp fall air blow through your hair, or sending a “thinking of you” note or a hug to a friend in need…

 

 

Paint your nails…a pretty color…on the porch outside…with your best friends

Finally tackle that pile of laundry you’ve been procrastinating all week…

Oh Dessert, How I Love Thee: Healthy “Dessert” Options

The other day after dinner, I reached into my cabinet for a handful of Ghiradelli Semi Sweet Chocolate Chips. I’m a huge fan of dark chocolate, and these little gems do it for me every time. “What are you doing? Didn’t you just eat dinner?” my neighbor asked, confused of why I was eating chocolate right after my eggplant lasagna indulgence. “It’s my dessert!” I shouted back at him. “What, you eat dessert?” Um, duh! And let me tell you: sometimes it’s a lot more than a handful of chocolate chips. Just ’cause I’m healthy doesn’t mean I resort to broccoli and peas for my post-dinner treat. 

Dessert. Ahhhhhh. Just the sound of it alone makes me  feel all warm and fuzzy inside. It’s honestly one of the best things on earth, the perfect ending to a perfect meal. Get Rid of That Guilt: Why Skipping a Workout is OK

This morning, I got up early and headed out to meet my friend at Starbucks for…wait for it…PUMPKIN SPICED LATTES! Yes, they are indeed back and I couldn’t be more excited about it. Not only do I love the flavor, but it makes me ecstatic for the fall season: pumpkins, running outside, not sweating in my 100+ degree apartment, kettle corn, hayrides, apple picking… Seriously, I could go on forever. 

Anyway, as we chatted over our absolutely delicious “fall in a cup” lattes in the park, my friend admitted to something: she felt guilty for skipping her morning run. “I woke up early so I could run before work and then just laid around the house and didn’t do it. Now I’m going to feel guilty the rest of the day.” As I took another sweet slurp of my latte, I reflected on how I’ve been there a million times in the past. You Asked for it: Homemade Eggplant “Lasagna”

You asked for it, so here it is! I modified a fatty recipe my aunt had given me for eggplant lasagna, using eggplant instead of noodles. Nifty, huh? Anyway, after some big changes to the recipe (i.e. using tofu instead of ricotta cheese), this recipe turned out to be a winner! Note: it’s not the “prettiest” looking picture but boy does it taste amazing. Serve with a side salad. 

*serves 3-4 

-1 large eggplant, peeled and sliced very thin (think: substituting for lasagna noodles)

-8 oz. frozen organic spinach

-2 TB olive oil 

-2 cloves garlic, crushed

-1 egg, beaten

-1/2 block firm tofu, chopped and mashed

-4 to 6 oz. fresh mozzarella cheese, shredded

-1/4 c. grated parmesan cheese

-2 TB dried basil

-1 c. of your favorite tomato sauce (with garlic and/or spices)

-salt and pepper to taste 

1. Prepare eggplant, cutting extremely thin slices. Lightly saute on medium heat for a few minutes in a large pan with olive oil. Remove and set aside.

2. Once removed, saute spinach and garlic in same pan in olive oil for about 5 minutes. Combine egg, cheeses, and bail and mix together until blended. Note: the tofu should crumble up … Read More!

Dinner for One, Please: Eating Healthy on a Budget

As of this week, I have officially been living in Boston for one year. ONE YEAR! I can’t believe how fast the time has flown by. I also can’t believe that while living in the exciting city on a budget (let’s just say I won’t be rolling in the dough for quite some time), I’m still able to manage my money. People ask me all of the time how I survive in this expensive city. “Dinner out, cafes everywhere, pricy bars…how do you possibly do it?” 

While I talked about eating healthy on a budget in my interview with Lifestyler last fall here, I thought I’d share some new tricks of the trade now that I’m truly a savvy Bostonian (yay, I can finally call myself that, although I still don’t have the accent). Bring Your Inner Beauty OUT

This morning after breakfast, I went into the bathroom for my usual makeup routine. Moisturizer. check. Few dabs of liquid concealer. Check. Touch of powder. Check. Mascara. Check. Eyeliner. Check. Then I saw some bright pinkish/purply lipstick at the bottom of the bag, something I haven’t used for a verrryy long time. After all, I’m a pretty simple girl and normally just stick with clear lip gloss or vaseline if anything on my lips. But today was different. This lipstick had a story behind it. “bibo,” it read in cursive across the outside. “bibo? what the hell is bibo?” Then I remembered what it stood for when my mom gave it to me a few years ago: bringing inner beauty out. 

So what did I do? I grabbed ahold of that lipstick, twisted it up and applied some on my lips. Sure, it’s bright and a little bit much but I was going to rock this lipstick for all that it’s worth today. Labor Day Fun

Happy Labor Day to all of you Healthy Chicks out there! Hope you are all having a wonderful day, whether you are out getting your last drop of white clothing in (which frankly I don’t believe in), chugging beers, or BBQ-ing away. Whatever you choose to do, it’s your day off to do whatever you so please! Gosh, don’t you just looooveee days off? 

Anyway, while back in college I’d probably be chugging boxed wine out of the bag and running around in the sun, this Labor Day I took as a personal day and did everything I wanted to do (ya gotta be selfish sometimes). 

I started my day cleaning and organizing the kitchen. It was way overdue. When you can’t find your favorite coffee flavor, and it takes 10 minutes to dig up the Cuisinart, you know you have a problem. Alas, the problem is fixed due to my master organization skills.

Be Creative & Colorful With Your Food!

I’m often asked many questions when it comes to fitness, diet and healthy cooking. Today I was asked on my website what the best options are at the grocery store for healthy cooking that’ll ensure a good look by next weekend. Then there’s my sister who would call me nearly every week when she was in college asking what the “best” or “right” choices are for her meals.

While I’d give her (and many others) my two cents plus some nutritional wisdom, the thing is: there is no RIGHT choice when it comes to what you put on your plate. Sure some options are much better choices than others, but it’s oh so much fun to experiment and try new things, rather than go with the usual boring “health foods.” What’s the fun in same old, same old? A Little Bite Goes a Long Way


I have a confession: Sometimes when I go into Dunkin’ Donuts for my morning coffee, I ask for one munchkin. Yes just one chocolate glazed munchkin donut. (They usually give it to me for free.) And sometimes I just take one nibble of it and throw it out, but boy does it satisfy my sweet tooth. I also tend to pick at pizza (I nibble at the pepperoni or cheese), burgers, nachos, and other such indulgences.

Don’t get me wrong: if I want the whole thing, I’m going to eat it. However, if I’m not that hungry or know something is going to upset my stomach later on (I am supposed to stay away from wheat after all), I settle for a bite or two and move on. My parents and friends used to make fun of me, calling me a “bird” because I pick and nibble at things. However, that’s not really the case. Boy, CAN I EAT, when it’s something nutritious, energizing, tasty and satisfying…when it’s something I’ll enjoy to the fullest. The Healthy, No Fuss Guide to a First Date

So, I’m going on a date tonight and I have to say I’m quite excited. Hey, dates are fun. While some of my friends (whose names I won’t mention) get nervous, sweaty and, well, gassy, before a first date (HA), I think about other things. “What do I eat? What will I wear? What do I order? How much do I drink? I’m a “light weight” these days…what if I get too drunk? Will I look OK?
