Hump Day Lesson of the Day: A Simple 15 Minute Chicken Parmesan Recipe
Sure, I love cooking as much as the next girl. But sometimes I’d rather spend an hour catching up with last night’s Bachelorette while organizing my closet for summer clothes than slaving away in the kitchen. When you live in a teeny tiny apartment with no AC, the last thing you want to do is preheat the oven to 400, as you (wo)man five pots at once. No thank you.
But what if you’re hungry? What if you don’t want to order out, but cold cereal and boxed mac ‘n’ cheese just aint cutting it?
Luckily for you (and for me) I’ve simplified the classic Chicken Parmesan recipe so you can be in and out of the kitchen in about 15 minutes tops. This dish is healthy, wholesome, and most importantly: easy as pie. It tastes like the real thing too, so you’ll still get your home-cooked fixing.
Lazy Lady’s Chicken Parm with Brown Rice Penne
*Makes 1 serving
What Ya Need:
-2 to 3 small boneless, skinless chicken tenderloins
-1 TB cornflake or panko crumbs
-1/4 c. of your favorite marinara sauce (I prefer low-sodium, all natural varieties and LOVE Trader Joe’s Recipe #99 Traditional Marinara Sauce)
-1/4 c. light mozzarella cheese, shredded
-1/4 tsp. basil (or a few shakes to taste)
-1/2 c. baby spinach, fresh
-1/2 c. brown rice pasta
-1 TB olive oil for cooking
-Parmesan cheese for pasta (optional)
1. Boil water and cook brown rice pasta according to directions.
2. In the meantime, coat medium-sized skillet with olive oil and sauté chicken tenderloins on medium heat. Once chicken is partially cooked, shake breadcrumbs on top, coating both sides.
3. Add in marinara sauce, basil and fresh spinach. Stir. Sprinkle mozzarella cheese on top, cover and let simmer on low heat until spinach is cooked through and cheese is melted. Serve over pasta with optional parmesan cheese. Enjoy!

When I want a quick fix but don’t have the time to prepare a full blown meal I make whole-grain, organic cous cous. Once the water is boiled, you add the cous cous in the pot and immediately remove it from the stovetop and let it sit for five minutes. As it sits I cut up fresh veggies to add into it (with a squeeze of fresh lemon juice) and the whole meal is complete within 10 minutes.
I add:
– diced avocado
– diced cucumber
– thinly sliced sundried tomato
– pinenuts
– pinch of kosher salt
