Friday Favorites: Chipotle, Quick Oats, A Dollar & A Dream

Why goodmorning, ladies! I know this post is a day late, but Friday kind of got away from me between meetings, going out for sushi, and watching The Boy’s last softball game. Anywho, even though we’re a lil delayed, here are this week’s Friday favorites:
Chipotle: I can’t believe that I had never been to Chipoltle before last night. This place is genious! Not only does this Mexican food haven have the BIGGEST burritos you’ll ever see, but they have every. single. topping. & hot sauce you can possible think of. I opted for a healthier option, and went for a salad topped with grilled chicken, pico de gallo, salsa, roasted vegetables, brown rice, shredded cheese and a touch of sour cream. It was heavenly, and you bet I slurped up every last bite of it. The ingredients tasted ultra fresh, and the meal was filling without being too heavy.
Quick Oats: I know, I know, oatmeal talk, again? But it’s so…boring, you think to yourself. Not so much! This morning I made two bowls of Organic Quick Rolled Oats for The Boy and I in just a few minutes. Yes, it’s true: eating healthy doesn’t have to be a hassle. With 7 grams of protein, just 3 grams of fat, and 180 calories, rolled oats makes for the perfect fill-me-up breakfast. Rather than crashing quickly on a sugary bowl of cereal, bagel or a muffin, the fiber in your oats will keep you full even longer. I topped our oats with Smart Balance butter, a dash pumpkin pie spice, a little brown sugar and some maple syrup. We enjoyed our nutricious breakfast with a good old cup o’ Joe.
Scratch Tickets: Lately, I’ve had an obsession with scratch tickets. Since it’s no secret I’m not loaded (or anywhere close to that), I’ve been counting on winning the Lottery or the “grand prize” on a scratch ticket. So far I’ve been banking on the $1 scratch tickets since I’m kind of poor. Hey, you know what they say, “All you need is a dollar and a dream.” And, well, I have both of those. Last week I won a whopping $10 and this week I won my dollar back. Hey, a girl can dream.

Oatmeal is never boring, especially with some berries and a dash of cinnamon.

@Jordan I agree, you can definitely dress it up a lot. I like to add sliced banana and peanut/almond butter too!

Hey girl, I haven’t been over to your blog in awhile! No worries, I’ve been neglecting mine, too! What brand of oats do you use? I’ve been wanting to branch out from instant oatmeal but haven’t found a great brand. And do you ever have overnight oats?!

Hey Brit! I really love Bob’s Red Mill gluten free oats which I get at Whole Foods. I also enjoy Quaker 100% steel cut oats, which are packed with nutrients and have a tasty, rich nutty flavor to them! Try experimenting with different toppings too, like fruit, various nut butters (almond, sunflower, etc), agave, cinnamon, nutmeg and other spices. It can really do wonders for the flavor!
