Power Protein Spinach Salad *Vegetarian

This salad is a perfect vegetarian dish for an energizing lunch or dinner. Enjoy by itself or with a glass of red wine and piece of toast! 


-1 cup baby spinach
-1/5 block of extra firm tofu, cooked* (*recipe for my Italian Herbed Style Tofu here)
-1/4 c chopped walnuts 
-1/2 small apple, chopped
-1/2 medium sweet potato
-1/4 c tomato, diced
-1 TB olive oil
-1 tsp. oregano
-1 tsp. basil
-fresh lemon juice, squeezed (for dressing, according to taste)
-salt and pepper

1. Cook tofu according to recipe and in the meantime, bake sweet potato in the oven, or cook in the microwave on high for approximately 5 minutes.
2. Mix together spinach, apple, tomato and walnuts in a salad bowl or dish.
3. Add cooked tofu and sweet potato. Finish the salad with the herbs, olive oil, lemon, salt and pepper drizzled on top according to taste!

We all have those days. You know ’em… You set your alarm the night before for 7 a.m. hoping to get in a good, long workout before the day begins. You’re totally gung ho for your spectacular plan; that is, until 7:00 rolls around.

The Glass is Half Full (Really, I Swear It is…)


Today at work, a friend and I began discussing positive energy, and how it can really change your (and everyone else’s) entire mood when it’s present.
You see, this friend of mine is one of those positive “glass is half full” kind of people. Even if she’s had a crappy day, exhausted from not getting enough sleep or just spent the entire day caring for her baby son, she’s usually in a perky, bright mood. She’s definitely a go-getter, and really doesn’t allow anything to get in the way of her optimistic outlook on life, because frankly, why should she?
“It just takes more energy to be mad and angry,” she said. “Why not instead just be happy?”
I wish there were more people like her with this kind of outlook on life, more positive vibes going around in this universe. After all, positive people make everything happier and sun-shiny, and are simply just more fun to be around.

Alright, seriously ladies: no more negative talk about your bod. It’s about time we embrace what we have, love everything our body has enabled us to do and stopped picking apart all our “flaws,” once and for all because there is no. such. thing.

One little picture, the picture you see above, led women (and men) to write in thousands of letters to the editor on how beautiful this women is because…she is real.
One woman wrote in,
This beautiful woman has a real stomach and did I even see a few stretch marks? This is how my belly looks after giving birth to my two amazing kids! This photo made me want to shout from the rooftops.”

Fall Spice Chocolatey Fruit Smoothie

I invented this smoothie this a.m. for breakfast because we were running low on food in n the fridge. I threw together a few ingredients, blended them up and voila: we have a perfect, rich ‘n’ flavorful smoothie for fall.


-1 cup light chocolate soymilk (or chocolate almond milk)
-1 medium banana
-handul frozen strawberries (about 1/2 cup)
-1 tsp. cinnamon
-1 TB flaxseed oil
-1 tsp. pumpkin spice (optional)


Blend all the ingredients together in a blender, making sure the frozen strawberries are well chopped and blended in. Pour into a glass and serve with a piece of toast, or take it on the go for a lovely headin’-to-work-treat : ) This smoothie is energizing and full of flavor, with an extra fall kick!

Send a Compliment: Go Ahead 'n' Give it a Try…

So, the other day I began thinking about the impact of a compliment, and how frankly they can make or break your day. Seriously, I, among many women I know, take what other women say to heart.

For example, the other day while on my way to a cafe, a woman on the T told me how much she  looooved my outfit, and immediately I felt wonderful. She turned my plain, OK run of the mill day into great in a matter of a few seconds, with just a few nice words.
Suddenly, I was cheerful and feeling GREAT about myself…not just for a few minutes, but for the whole freakin’ day!
So now why, I ask, don’t we dish out these sort of compliments more often? 
I feel like too many women get into the whole competitive ego thing, and feel the need to bring others down to make themselves feel good.

Healthy Chick's Night Out: My Top 5 Diet-Friendly Drinks

OK, so just because I’m a “Healthy Chick” doesn’t mean a girl can’t have a little fun once in a while, especially on the weekends. Here are my top 5 healthier drinks of choice when I’m having a girl’s (or shall we say, chick’s) night out. 

1. Vodka+seltzer+a splash of cranberry juice
2. White zinfandel+seltzer (soda water) = Zinfandel Spritzer (This one’s my mom’s signature order every time we go to a restaurant and I must say the woman knows how to order a “skinny” drink–since half the glass is calorie free, you can enjoy this tasty delight guilt free)
3. Vodka+diet lime tonic+lime wedge
4. One shot (or two) of good tequila-none of that fake, crappy stuff. (Make sure you get the good stuff with 100% agave from Mexico so it’s not loaded with sugar!) 
5. A glass of red wine (While it may have a few more cals than the white variety, red wine is good for your heart and is filled with antioxidants)

10 Fool Proof Ways to Energize: How to Conquer that Mid Day Slump Once and For All!

Yesterday was just one of those days where everyone seemed tired. I work at an athletic club, and throughout the entire day, people just weren’t there usual, cheerful selves. They were coming in yawning, with bags under their eyes, looking completely burnt out. 

Even I found myself yawning and feeling EXHAUSTED by the end of the day. Have This For Dinner Tonight: Better-for-Ya Fried Rice*

I made this tonight for dinner with some random veggies in my fridge and leftover brown rice from the night before, and it was extremely delicious and filling. Enjoy! *Vegetarian


-1/2 cup brown rice, cooked
-1/4 cup broccoli, frozen
-1/4 cup onion, chopped
-1/2 diced zucchini
-1 egg
-2 TB Extra Virgin Olive Oil
-Salt 
-Pepper
1. Coat large frying pan with olive oil, and pour frozen broccoli, onions and zucchini into pan. (or whatever veggies you have available-peas, corn, carrots, sugar snap peas and squash would also taste great!)
2. Once vegetables cook, add in the brown rice. Add more olive oil or butter spread if desired.
3. Crack egg on one side of the pan, and chop into the rest of the rice mixture.
